Leaf removal and washing
After harvesting, the olives are cleaned of leaves and carefully washed to remove dust and soil residues.
Crushing and malaxing
The crushed olives turn into a homogeneous paste, which is then mixed to promote the aggregation of oil.
Cold pressing
Using mechanical methods, the oil is separated from water and pomace, preserving its taste and nutritional properties.
